Homemade beef tamales with baby squash and tomatoes out of the garden. I love getting fresh masa from Art's Mexican Products then I mix in garlic, assorted chili powders and tomato bullion I think I also put some cumin in this batch. The lard I used had also been used to cook pork and duck comfit. The squash was a mix of zucchini and patty pan, tomato, onion, and peppers. Also seasoned with cumin and some of the sofrito that I used in the meat. The meat I seared and then braised with hot and sweet peppers, onion, tomato and spices my version of carne guisada. I cooked the braising liquid down to a paste so the filling would be thick enough with out having to worry about a thickener. Then topped with queso fresco.
