Updates: kids, grading, retreat, dreams, sticky rice

I feel totally behind on grading. And it's not that I've not done ANY...it's that there's just lots more to do.

Thursday and Friday I went with the freshmen on retreat out at Fullersburg Woods in DuPage Cty. ( Tromping through the woods with freshmen )

Coconut/mango Thai rice is one of the things I like to make for myself as a treat (since I can only get the rice in Kyoto). It really is delicious, and not only that, it SMELLS so good.

The recipe I use doesn't have nearly as much sugar, though. I only use a couple spoons of it.

...Now I'm making myself hungry...

Oh, the huge sugar content is one of the glorious things about it--and, according to the exchange student we had last year, is also VERY Thai. I love the sugar/carb bomb that is this yumminess. And, yeah...it just smells FANTASTIC. I had NEVER liked mango before and now and All About The Mango and Sticky Rice.

I now have a 10-lb bag of Thai sweet rice in my home, and plan this week to buy 25 lbs or so of sushi rice (which I used for my first sticky-rice batch and which was perfectly lovely). Then I need to get some plain old white rice for steaming as well. Four kinds of rice in the house. I think I like that. :-)

I'll have to try your version, then, and see how it compares.

I don't eat rice as much as I ought to, considering where I live.
