I work in a gas station, and while we don't have any rules about showing the camera what we're doing, we do have a camera directly on the register. A couple years ago a customer accused me of taking advantage of her child, because she sent him in with a handful of crumpled ones (in all fairness, they may not have been crumpled when she gave them to him, as he was fairly young), and thought she'd given him a five. I had smoothed them out and double-counted them, so the manager was able to see clearly that there were only four of them. I've since gotten in the habit of counting ones - or anything with a lot of bills - with my hands angled slightly up on the off-camera side so that the camera has a clearer view of how many bills are in my hands when I count ones. :)
Man, those cameras are similarly useful in a casino setting, let me tell you. One of my coworkers had their job saved by the camera after a very angry, indeed, customer made a similar accusation (with some larger figures, but the same principle).
