Heh, ok, I finished the translation. It was a challenge! But fun!

For those who don't know, Nidda needed a recipe translated for her upcoming entry at Candlemas. She gave me a copy of it (its from the Mappae Clavicula); a picture/scan of the original manuscript. It's in early Gothic with about a million (ok, maybe not that many) ligatures, ( Read more... )

I'm going to do some graphic work and put up a few of the elisions and ligatures, for future reference. I edited the post to add that I'd found a good transcription, which is very helpful. I wasn't far off!

You are wonderful. I saw those sugar candi recipes, but I don't know how to seeth and skim boiled sugar so I chose the honey recipe. It seems that nothing is as easy as it appears to be, as I thought this entry would be simple. And I have so many unanswered questions.

You are off to a good start! Looking for the answers to the questions you didn't know you wanted to ask can take you to some very interesting places.

Look at the post again, I found a better transcription, which I've translated. It doesn't change much, but it can change the 'until it turns white' bit, to 'until it gleams/brightens'. Also it stresses, even more, that the honey is to be agitated and turned, I get the impression it's to be really stirred a lot, both to keep it from boiling over and to mix in a lot of air, which'll make it both light and brittle (less sticky) when it hardens.

It's a mystery. It seems the recipe was transferred through so many manuscripts, and from the Arabic world or Spain up north (where there was no sesame) that it just got dropped.

The Mappae Clavicula is weird. It's supposed to be for workmen and so on, and yet it's got dribs and drabs of just about everything in it. Right before the candy recipes are recipes for pigments.
