I don't know how long pie crust lasts but a future idea for pie crust.
When I was a kid my mom would roll out pie crust and put a melted butter on top and then put a cinnamon and sugar mixture on it and rolled it. She then sliced it and made pinwheels.
Another option if you have the space is to freeze it in the pie pan and then defrost in fridge or on shelf and then put your happy goodness in the center and bake :)
I would do that if I had a frost-free freezer. The inside of my freezer kind of looks like a blizzard landscape. I should totally get some Lego men and act out winter battle scenes before I defrost it.
Moisture loss is an issue - I'd stick mine in a zip-lock. Other than that, no worries.
(I have also profited greatly from the hint that if your crust dought gets warm, don't worry about it, just stick it in the freezer for a bit before baking. But then, I don't do a lot of pastry, for all that I do a lot of other kinds of baking.)
