1) It absorbs he flavor of whatever you put it with! For me, this means lots and lots of garlic.

2) It is versatile. It can be stir fried with lots of oil (so it doesn't stick to your pan) or deep fried for the yummiest thing EVER (I don't have a deep fryer but I pay good money for restaurants to deep fry tofu for me.)

3) There is a secret to making it have a more meaty texture. You freeze it, then thaw it out (naturally or by microwave), then squeeze out the extra moisture. Viola! Meaty texture so ral that even your cat won't know the difference. Yum!

4) It's good for you! Easy block of protein, plus it supposedly lowers your cholesterol. Who knew?

If I could cook, I would provide recipes. All I can tell you is that, when someone who CAN cook uses it, tofu is awesome. Also, inexplicably, it seems it makes excellent coconut-flavoured deserts. I was both horrified and elated at this discovery.

You might be able to trade the tofu in for a rack of ribs at the barbecue, like when the police take in handguns. That wouldn't suck.

I agree with the above, it's yummy frozen or deep-fried. It's also good baked into a pumpkin pie. I'll see if I can dig up the recipe we use...
