Last weekend I made a wonderful spinach/egg/mushroom bake, though never having baked eggs before I overcooked them. (Note to self: don't judge based on color.) Also I made a half-recipe, since there was only Mr Psmith and me, but used jumbo eggs. Since the pan was slightly larger than 1/2 of a 9x12 the spinach mixture was spread a bit thin, and the eggs were a tad too big for the little wells. Still, the taste was delish.
