So, a couple of weeks ago I was stumped because I had nothing in the fridge for work lunches. But I had some home made breakfast sausage patties in the freezer and I had a package of English muffins in the fridge. And, I always have eggs

I love homemade egg and cheese muffins. I was just thinking I need to make these tomorrow for Sunday breakfast.

Last weekend I made a wonderful spinach/egg/mushroom bake, though never having baked eggs before I overcooked them. (Note to self: don't judge based on color.) Also I made a half-recipe, since there was only Mr Psmith and me, but used jumbo eggs. Since the pan was slightly larger than 1/2 of a 9x12 the spinach mixture was spread a bit thin, and the eggs were a tad too big for the little wells. Still, the taste was delish.
