Mushroom and Smoked Salmon Frittata

I had a bunch of leftovers in my fridge ... 4 egg whites (from the cherry cheese danish braid), smoked salmon and a few strips of cream cheese (from the Philadelphia sushi roll), and 6 mushrooms from my last pizza making venture ( Read more... )

Sigh, that looks great. The one thing that the Big Guy can't handle is smoked salmon.

It took me a while to enjoy smoked salmon. I get salmon overload though it I have it too often and unfortunately, I didn't think I could refreeze the package of smoked salmon after I had thawed it for use in the sushi rolls so I wanted to use it up quickly. I've eaten 3 portions of the frittata already today. :)

I am okay with it, but I prefer fresh salmon more. The Big Guy would like to avoid that, but does eat it on occasion.
