Lemon Poppyseed Bundt Cake

A while ago I dug out my two bundt cake pans and declared my intention to use them both. It had been a quite some time since I made a bundt cake and for some reason, the memory of an under-baked/pale cake around the central tube sprang to mind.

Thank you for the compliment. Lemon and ricotta were my inspiration. I almost made a ravioli filling with them instead but then realized I had a perfect excuse to try out the bundt cake pan. Next bundt cake ... chocolate and cherries. I try to use what I've already got in my pantry, fridge etc.

Lemon anything is the Big Guy's passion. I created a Myer lemon ricotta pancake for him a while ago and thus assured myself of continued married bliss.

No Meyer lemons in my area. My nephew and I recently went to a lunch buffet at the local casino and I had sample a piece of the Meyer lemon pie. Can I say that I was disappointed? It didn't seem to be that special. All I got out of it was a really tart lemony taste. Kind of anti-climactic.
