Spam #2: Spam Loco Moco

Spam Loco Moco (corrected: pronounced loh-koh moh-koh) is another dish that comes from Hawaii along with the various stories behind the name. Click on the link to read them for yourself. :)

It's a very filling, fast and cheap meal that is eaten for breakfast, lunch or dinner. I can definitely confirm the filling part. I barely made my way through half of the dish but then I've been eating lighter meals for the last month.

I'm going to post the regular version of Loco Moco tomorrow (I hope) but today, as I already had the fried spam, I decided to do this slightly more exotic version.





Spam Loco Moco ( 1 serving)

1 cup of cooked sushi rice
1 egg, cooked over easy or sunny side up (as long as your yolk is still runny)
1 slice of fried spam
2-3 tbsp kabayaki (bbq eel) sauce
1 tbsp green onion, garnish

Note: 1/2 a cup of cooked rice is plenty for most people. :)

In a large bowl, spoon in the cooked sushi rice. Layer over a slice of fried spam and the fried egg. Spoon over as much bbq eel sauce as you like and sprinkle over some green onion for garnish.

With chopsticks or fork, break the egg yolk into the rice and fork up some rice, egg and spam. Repeat.
