I'm having a little crazy adventure with herbs and spices at the moment.
With a lack of supporters to be guinea pigs for sweets (except the colleagues), seems more sensible to learn more savoury dishes since I need to eat main meals!
Disclaimer: I have never tried authentic Khao Soi or Chicken Adobo in their native countries!
Think I passed through Chiangmai once...can't say I been there, barely remember if I passed through, much less ate Khao Soi. This dish was introduced by colleagues at this wonderful Thai joint Pok Pok near work. At first I was doubtful. Without knowledge of the original dish, I thought it was some weird western creation like the famous Singapore Noodles.
Then one day during some random conversation, my manager J told us about her quest for Khao Soi after trying them in Chiangmai, and said we should try this one.
And so I did, and so I am addicted.
Wonderful world of google generated many a recipe, piece together what I think would suit my tastebuds, pretty happy with the end results!
Chicken Adobo - Never been to Phillipines and very uneducated about the cuisine!
A recipe that colleague K shared with me. Knowing full well my own tastebuds band the husband's, had to reduce the vinegar by about a third.
Still super tangy and strong flavoured. Chicken was really tender HOOTS! And the husband actually didn't mind it. Too tangy for his liking but still good enough to eat a bit lol.
