I can only think of the Grimm fairytales of The Girl Without Hands. I guess the story changes different ways but its always the same, she cuts off both or one hand to save herself or her father.

I thought of that one briefly, but it's not it--I seem to remember a focus on medieval politics in the version I heard, and the father and daughter were both definitely upper class, had their own castle/manor/fortress/something, etc.
