Hi all! I, like many of you, found this community through the spotlight and am thrilled. I got a slow cooker (one of the big ones!) two years ago for Christmas and have had a tough time finding good non-chili recipes for it. I've already bookmarked about 11 recipes and currently have the turkey tacos going as I type. Since I've cherry-picked like no other I thought I'd offer up one good slow cooker veggie stew and one non slow cooker recipe that is easy peasy and goes very well with with slow cooked dishes (namely if you're entertaining and want to look like you've made a fuss)
Super Tasty Veggie Stew
1 bag Mediterranean-style frozen vegetable mix (Italian style works in case your supermarket doesn't carry this type)
2 zucchini, sliced (I typically slice on the half for this)
1 clove minced garlic (or 1 tsp minced jarred garlic or a few shakes of powder)
1 can of garbanzo beans (aka chick peas), drained
1 can diced tomatoes (any kind works but the "italian style" with the basil, garlic and oregano works nicely, if you get the normal kind, add a few shakes of those spices and you're good to go!)
1 can veggie broth (low sodium works best so you can alter the salt content)
1 can condensed tomato soup
1 packet of Pesto mix (I've used Knorr brand before with a lot of success)
salt and pepper
* Add frozen veggies, zucchini, garlic, garbanzos, tomatoes, broth, soup and pesto mix to your slow cooker and give it a stir
* Cover and cook on low for 8 hours or high for 4 hours. Season with salt and pepper to taste.
~side note: to give it a kick I've thrown in a good pinch or two of crushed red pepper flakes about 30 mins before serving~
Taco Dip
This isn't a slow cooker recipe, but has gone really well as an appetizer when I've served Mexican or Latino slow-cooker dishes.
1 can refried beans (I prefer the vegetarian kind, but use what you like)
1 small tub sour cream
1 smaller jar of salsa (use your favorite brand, they all work!)
1 1/2 Tbsp. taco seasoning
shredded cheese
1 small can sliced olives
*In a small casserole dish spread out beans.
*Mix taco seasoning with sour cream and spread over beans.
*Top the sour cream layer with salsa.
*Sprinkle your favorite cheese over top and garnish with olives.
~It sounds simple (and it is!) but it is a crowd pleaser and doesn't take a lot of effort~
