hello all! i've been tracking all of these and found some tasty recipes to try... thank you all for sharing!
i'm a huge fitness buff, so i'm always trying to find things that are really healthy and easy to make in the crock pot. here are my two favorites:
Turkey Chili
(you can make this with ground turkey or ground chicken, i use turkey as it is generally a bit lower in fat content.)
1 lb. ground turkey, browned
1/2 red onion, cooked (i brown it with the turkey while i'm adding the other ingredients to the crock pot)
1 28 oz can crushed or diced tomatoes
1 8 oz can tomato sauce (not paste!)
1 15 oz can each kidney, pinto, and black beans (or your choice, these are just my favorites)
1 4 oz can ortega diced green chiles
crushed red pepper and cumin to taste
salt and pepper to taste
cook on low 8 hours and serve
Chicken with Veggies
(i love this recipe because you can use WHATEVER you want as far as veggies! not really much of a recipe but a great idea! the chicken cooks to be sooo tender, and without any of the oils or grease that come with pan frying.)
4 chicken breast halves, or several chicken pieces of your choice
6-8 new potatoes, halved
3 large carrots, chopped
1 white onion, chopped in large pieces
fresh green beans
1 head broccoli, cut into pieces
italian seasoning to coat the chicken breasts
cook on low 8 hours or until inside of chicken is cooked through.
this is a nice dish to serve over brown rice, and you can add different spices and veggies as you like. so good, and so nutritious!
Enjoy!
