this recipe, and Andy has been buggin' me for pie, so to the kitchen I went!
I start with the pudding mix, the whipped topping mix, and the milk in my KitchenAid mixer. I love this mixer!
It really takes the work out of whipping things together. Here, I've mixed the ingredients until soft peaks form.
Now I fold in the cherry pie filling.
And into the pie shell it goes! I used a graham cracker pie crust, because it was hot, and I didn't feel like baking a pie crust.
Two hours later, out of the fridge it comes, and I artfully decorate it with the pie filling "juice."
So how was it? It was quick and very easy to make, but it tasted like a quick pie filled with cherry pudding. Not bad, but nothing special either. It would be good for a picnic or a fast dessert. I made one mistake, however- I bought "No sugar added" pie filling. What I didn't notice was that it was sweetened with Stevia instead! I hate artificial sweeteners- they leave a horrid aftertaste in my mouth. Luckily, it wasn't very strong once the pie was finished, but I'll be checking my labels more closely in the future, especially since I made the same mistake with orange juice at the grocery store.
I served it as dessert after the Sausage Pudding, and again, Andy ate all of his, so it passes the roommate test.
