My mum had made chicken curry and rice today, so I decided to make something up with the cooked rice and the things that I found in the fridge. I was pleasantly surprised at how well it turned out! It was really quick to make as well.
Ingredients
Mushrooms (I used five small ones for myself)
One onion
Cream
Butter
Ready cooked rice
A clove of garlic
Jalapeno peppers - I used red ones out of a jar.
Mixed herbs
Salt
Pepper
Directions
1) Fry the onions in olive oil till soft.
2) Add the garlic and fry for 1-2 minutes.
3) Add a generous blob of butter then add the mushrooms* and the peppers.
4) Cook for 5-6 minutes or until the mushrooms are squishy.
5) Add the cream, rice, mixed herbs and salt and pepper and cook for a minute or so until the cream and rice have mixed properly.

*Mushrooms absorb the flavour of whatever they're cooked in. Adding the butter gives the mushrooms a much nicer taste than if you fried them in the oil alone.
