Yesterday I made an everything-bagel sandwich..and it tasted like a taco. A really, really, good taco - too. I had my meat eating boyfriend test it out, and he agreed that if I hadn't had told him what was in it he would have assumed there was some sort of spicy beef.

ANYWAYS; here's how I made it.

Toast 1 everything bagel - spread the inside of both halves with some hummus.
Layer SPICY sprouts (It doesn't taste as good with alfalfa or regular sprouts)
Your choice of some leafy greens (I had baby spinach & lettuce)
& cut up celery and cucumbers. Put the halves together, squeeze it so nothing falls out - and om nom nom nom.

I swear, it was the best thing ever. In addition to that - I bag a lunch every day; anyone have some new ideas for me? I refrigerate my lunches overnight so I have extra time in the morning - what are the best foods that can stand up to that? I usually have a sandwich of some sort - soy nuts, rice cracker mix, everything bagel crisps, a banana, apple or half a pomegranate, and a stretch island fruit strip. It's been like this since classes started in September, and it's getting kind of monotonous. Easy, creative, yummy, things anyone?

AND - your favorite meal-in-a-box type of things? I'm about to try This (Near East Basil & Herb Pasta Mix) for something easy tonight.
