Jane's cheap-like-borcht veggie soup

Dec 02, 2009 21:31

Ingredients: serves three
I package Lipton's tomato veggie soup
Rice
Frozen mixed veg

First make the rice (directions depend on what type you use), somewhere between 1/2 cup and 1 cup is good, leave it a bit undercooked. Next add about 3 or 4 cups of water, bring to a boil and wisk in the soup powder/noodle mix. Let the thing simmer for a bit, stirring occasionally. Add about 2 cups, maybe more, of the frozen mixed veg and bring the pot back to a boil.
Et voilà, c'est fini.
Not only is it cheap (about $1 a serving) it's easy as heck to make too.

Variations include using condensed tomato soup and half a package of noodles instead of liptons. This would probably result in more food. Other ingredients like certain seafoods or even chicken could also be added.
