Cream of Celery Soup

Cream of Celery Soup

Ingredients
1 bunch celery, chopped very small
2 medium potatoes, chopped in smallish chunks
1 small onion, diced
4 cups water with 1 veggie bouillon cube (or equivalent stock)+ more
1 bunch fresh parsley, chopped well
2 cups soymilk

Directions
Put all ingredients in the crockpot on low for at least 3 hours (or before going to bed for the night). If in the crockpot for longer than 5 hours, add another 2 cups of stock at this point. Blend the soup (in stages) in the blender, until pureed. Return to the crockpot and cook on low for at least three hours.
