Root Vegetable Tagine

ROOT VEGETABLE TAGINE
found on the Web, but significantly adjusted

INGREDIENTS:
1/2 pound parsnips, peeled and diced
1/2 pound turnips, peeled and diced
2 medium-to-small potatoes, peeled and diced
2 medium onions, chopped
1 pound carrots, peeled and diced
8 dried apricots, chopped
4-6 pitted prunes, chopped
1.5 teaspoons ground turmeric
2 teaspoons ground cumin
1 teaspoon ground ginger
3/4 teaspoon ground cinnamon
1/2 teaspoon ground cayenne pepper
1.5 tablespoon dried parsley
1.5 tablespoon dried cilantro
22 oz vegetable broth (or more, enough to cover)

DIRECTIONS:
In a slow cooker, toss together the parsnips, turnips, potatoes, onions, carrots, apricots, and prunes. Season with turmeric, cumin, ginger, cinnamon, cayenne pepper, parsley, and cilantro. Pour in the vegetable broth.
Cover, and cook 6-7 hours on Low.
