I'm pretty bummed at the moment. My little sister and I are leaving on the 21st for a month long road trip from Arcata, CA, to Denali National Park, AK, and back. I booked the camp site and a bus tour to get further back in the park and the website said that "boxed lunches are provided". I called the park to make sure they can provide something for us (she's ovo-lacto, I'm vegan), and they said there's nothing they can do. "Everything is individually wrapped for you to build your own lunch and are made of croissants, deer sausage, cheese, lettuce, tomato, mayo, granola bar, and fruit juice". We can take our own food with us, so we won't starve, but it's pretty disappointing. My sister at least will be able to put together a decent lunch, but it looks like I'll be on my own. Hopefully we'll be able to stock up on vegan treats in Anchorage before we get to the park, because I doubt their welcome center has much better options.
It's not so bad though because we'll be traveling through Portland, Seattle, and Vancouver BC along the way and will get to eat lots of yummy vegan food there. Any recommendations for great places to eat or advice on food to pack for our trip (besides nuts and fruit, jerky, hummus and veggies)?
