For Thanksgiving, my family asked me to make this cake they found in the paper. The recipe looks fine, but I want to veganize it so I can also enjoy some. I'm not exactly sure how to do that, since I've never really veganized anything before. I've always just followed a vegan recipe.

So I want to make pumpkin cupcakes with cinnamon buttercream frosting happen for christmas. Can anyone point me to a recipe? I found pumpkin pie brownies and might make that if I can't make the cupcakes

Even though the recipe says warm, I'm pretty sure it's a lie, because in the last step it says to cool overnight or refrigerate before cutting. Hmm ( Read more... )

Autumn Cupcakes

(these are a bit thick, but I love them)

1 c. pumpkin
1 c. sugar
2 c. flour
1/2 tsp. bkg soda
1/2 tsp. bkg powder
1/4 tsp. salt
1 tsp. cinnamon
1/4 tsp. nutmeg
4 tbl. oatmeal
1 c. soymilk

350. 20-22 minutes.

Large bowl: dry ingredients
      Then, add all. Blend well.

these are pumpkin chocolate chip. i frosted them with cinnamon icing- recipes are from vegan cupcakes take over the world. i was really pleased with how they came out.
