Been making this tomatillo salsa quite a lot lately... Sometimes I fiddle with amounts and whatnot, but this is sort of the bare bones recipe. Feel free to adjust pepper amounts depending on your preference (more jalapeño/no jalapeño , habeneros etc...). You'll need a food processor for this one, kids.
Kat's Tomatillo Salsa
2-ish lbs Tomatillos, quartered
1 ea Jalapeno , sliced
2ea Anaheim peppers, rough chop
1 ea Wax pepper, sliced
1 ea Pasilla pepper, rough chop
1 ea SWEET onion, rough chop
1 bunch Cilantro, rough chop
1 bunch Green Onion, sliced
3 +/- cloves Garlic
TT Salt, pepper and cumin
1) Combine peppers, onions, garlic and cilantro in a food processor until it looks... Well, "slushy"
2) Add tomatillos and process again. Season to tast with salt, pepper and cumin
Easy-peasy lemon squeezy. :)
