All my recipes are meant to feed one person. I'll let you know if there are leftovers or what adjustments you should make according to my end results:)
Most of these are estimations, so feel free to change it if it doesn't seem right, or to your liking.
ingredients:
cous cous (1 cup)
frozen sweet corn (I only used about 1/4 cup, maybe use 1/2?)
canned black beans (again, used maybe 1/4 cup or less, could definitely use more)
sweet onion (chopped-- used maybe 1/8 cup, could use 1/4 or more)
cumin (1-2 tsp)
chili powder (1 tsp)
lime juice (1-2 tsp)
olive oil (2 tsp)
how to:
combine and mix all ingredients in a small bowl, except for the cous cous and oil
cook your cous cous (it should have instructions-- generally boil 1 cup water, add cous cous, remove from heat and cover for 5 minutes)
heat the olive oil in a pan
add the corn/onion/bean mixture to the pan and turn the heat down so it doesn't burn
while your cous cous is sitting aside, continue to stir the mixture
if it seems to be getting dry, add some water to the pan (only a tbsp or two) and continue to cook
it should be done cooking within 5 minutes or so
fluff up your cous cous, and put it in a bowl with your mixed veggies.
I ended up having not enough veggie mix for my one cup of cous cous, so, as my suggestions say, try cooking more veggies, or even cut the cous cous to 1/2 or 3/4 cup.
