Ideas for the transition back to Veganism while pregnant.

I haven't a clue where this post will fit into recipes, but I've been a member of this community since 2004 and all of the advice is nothing less than fantastic. I'm currently 3 months pregnant, and a vegetarian of about 10 years. I ALSO have a gluten allergy! No fun when you're pregnant and want to eat pita bread with your hummus.

I was vegan for 2 1/2 of those years, and now, more than ever, I wish to be vegan again. It's going to be a difficult transition this time around because of food cravings, but I plan on raising my child vegan because I want only the best in health and nutrition for the both of us. It was easier to transition when I was younger, because I was dating a vegan who always cooked for me and I had the time to cook fancy vegan meals every day. Now things have changed - I work, go to school, and I'm an expectant single mother. So when I do sit down to eat it needs to be quickly prepared, or pre-packaged.

I don't eat eggs and I've been drinking soymilk for 5 years, but I do eat egg and dairy bi-products. This needs to stop! I felt so much healthier all around when I was eating a good vegan diet. My favor to ask all of you, is what are your favorite quick and easy throw-together vegan recipes? Cheese is what broke my veganism and I love cheese.. so I'd really love homemade cheez ideas also. (Not a fan of store bought vegan cheeses, would much rather make them myself.)

I need lots of protein my diet (between 65 and 80 grams a day) and lots of fiber and iron. This post is longer than I wanted it to be, but any help and ideas on transitioning back to being vegan and healthy would be greatly appreciated! (And any tips from moms on how to avoid those cravings... I've been meat free for a decade and this is my first pregnancy and it's disturbing when McDonald's is appealing. Gross!)
