So, the recipe is from VWAV - it's the "Big Gigantoid Crunchy Peanut Butter-Oatmeal Cookies" recipe. However, I did not want to use peanut butter because I wanted to make these as widely edible as possible at the party I am going to (I have a lot of food allergies/intolerances, so I try to be sensitive to others'). Additionally, they are gluten-free (yeah, oats i know, but that's debated). They are AMAZING.
Recipe:
2 cups all-purpose non-gluten flour mix (I used Bob's Red Mill)
2 cups quick oats (the ones that cook in 3-5 min)
2 tsp. baking powder
1 tsp. salt
3/4 cup oil
1 mashed super-ripe banana (I used a frozen one that was thawed in the micro for 30 sec.)
2 cups brown sugar
1/2 cup soya milk
1 TBSP vanilla extract
Oven to 350 F, grease some cookie sheets.
Mix oats, flour, baking powder, and salt.
In another bowl mix oil, MASHED banana, sugar, soya, and vanilla.
Mix wet ingredients with dry ingredients.
Spoon onto cookie sheets.
Bake about 10 minutes (but watch out because my first batch was done at 8 min.)
