2 cups flour
tablespoon baking soda
tablespoon baking powder
teaspoon salt
2 cups soymilk (more if you're using whole wheat)
a little oil if you feel like it
mix dry ingredients, then wet. ladle into a nonstick pan or well-seasoned skillet and wait till the bubbles in the middle solidify. flip em, cook till golden brown. yum!

Easy Pancakes
Ingredients
2 1/2 cups all purpose flour
2 tablespoon sugar
2 tablespoon baking powder
1 tablespoon vegetable oil
1 teaspoon salt
2 1/2 cups soymilk or water
(optional: dash of cinnamon)
Directions:
This recipe, simple as it is, always gets requested!
Lightly mix all ingredients in a fairly large bowl; leave 5-10 minutes to rise. Its important only to mix the batter enough to moisten, as overmixing will make the pancakes tough. Gently fold down; leave again for 5-10 minutes if you have the time, and gently fold down again. (I don't usually bother, since everyones starving!) Cook medium to medium-high on an oiled skillet till golden, carefully breaking apart any large lumps with the spatula. Serve immediately.

Let the ingredients rise after you place them in the bowl for 5-10 minutes? What? That just seems completely unnecessary - then again, I'm not one to speak.

In the case of pancackes, it makes them fluffier. In the case of crepes it is necessary to remove the bubbles and helps to reduce tearing.
