Pancake help

I've checked through the memories here as well as various recipes for making vegan pancakes (How it All Vegan and Egg Replacer), but I can never get them to turn out right... unless they're all supposed to have gooey insides and have gross textures. Oh nooo... Vegan pancakes are the best! This is the very simple, foolproof recipe I always use.

2 cups flour
tablespoon baking soda
tablespoon baking powder
teaspoon salt
2 cups soymilk (more if you're using whole wheat)
a little oil if you feel like it

mix dry ingredients, then wet. ladle into a nonstick pan or well-seasoned skillet and wait till the bubbles in the middle solidify. flip em, cook till golden brown. yum!

Easy Pancakes

Ingredients

2 1/2 cups all purpose flour
2 tablespoon sugar
2 tablespoon baking powder
1 tablespoon vegetable oil
1 teaspoon salt
2 1/2 cups soymilk or water
(optional: dash of cinnamon)

Directions:

This recipe, simple as it is, always gets requested!

Lightly mix all ingredients in a fairly large bowl; leave 5-10 minutes to rise. Its important only to mix the batter enough to moisten, as overmixing will make the pancakes tough. Gently fold down; leave again for 5-10 minutes if you have the time, and gently fold down again. (I don't usually bother, since everyones starving!) Cook medium to medium-high on an oiled skillet till golden, carefully breaking apart any large lumps with the spatula. Serve immediately.

Serves: 4

The directions for that recipe seem very weird.

Let the ingredients rise after you place them in the bowl for 5-10 minutes? What? That just seems completely unnecessary - then again, I'm not one to speak.

Gently fold down... what am I folding?

the baking soda makes the dough bubble up, making your pancakes fluffier.

Letting the batter sit for 5-10 minutes relaxes the gluten, so pancakes will be fluffy and tender. I like to use whole wheat pastry flour because it has less gluten than all purpose or regular whole wheat flour (too much gluten can make pancakes tough). Rise doesn't make sense to me either because what you're really doing is letting the batter rest for a bit.

Folding means to gently stir the batter with a spatula.

Absolutely! You always should let pancake batter sit for a minimum of 10 minutes. The thinner the batter, the longer you should let it sit.

In the case of pancackes, it makes them fluffier. In the case of crepes it is necessary to remove the bubbles and helps to reduce tearing.

I'm pretty sure that's the exact same recipe I've used from one of my vegan recipe books (How it All Vegan). I must be cooking them wrong. I've tried the typical cooking methods (like you've listed, and like how I used to cook non-vegan pancakes) and I've tried going overboard (burning them just to see if the middle still is gooey - and it was). I don't know what the problem is, but the middle always has that gross texture.

I'll try again tomorrow morning and see what I can do.

I don't know... It might be that I never really made pancakes before I went vegan and I cut my teeth on the HIAV recipe. This one always works beautifully for me, barring my tendency to be distracted and burn them.

It sounds like you're cooking them too quickly - you might turn the stove down a bit after you put the pancakes on - your outsides are cooking too quickly for the insides to solidify.
