Pancake help

I've checked through the memories here as well as various recipes for making vegan pancakes (How it All Vegan and Egg Replacer), but I can never get them to turn out right... unless they're all supposed to have gooey insides and have gross textures. Oh nooo... Vegan pancakes are the best! This is the very simple, foolproof recipe I always use.

2 cups flour
tablespoon baking soda
tablespoon baking powder
teaspoon salt
2 cups soymilk (more if you're using whole wheat)
a little oil if you feel like it

mix dry ingredients, then wet. ladle into a nonstick pan or well-seasoned skillet and wait till the bubbles in the middle solidify. flip em, cook till golden brown. yum!

Easy Pancakes

Ingredients

2 1/2 cups all purpose flour
2 tablespoon sugar
2 tablespoon baking powder
1 tablespoon vegetable oil
1 teaspoon salt
2 1/2 cups soymilk or water
(optional: dash of cinnamon)

Directions:

This recipe, simple as it is, always gets requested!

Lightly mix all ingredients in a fairly large bowl; leave 5-10 minutes to rise. Its important only to mix the batter enough to moisten, as overmixing will make the pancakes tough. Gently fold down; leave again for 5-10 minutes if you have the time, and gently fold down again. (I don't usually bother, since everyones starving!) Cook medium to medium-high on an oiled skillet till golden, carefully breaking apart any large lumps with the spatula. Serve immediately.

Serves: 4

I would blame your recipes... :(

I do not have any problem making any of the pancakes from VwaV.

I use a non-stick pan, pre-heated, on medium. Cook until it starts to buble, and then flip to cook the other side.

really? isa's recipes always seem to have 1/3 cup of extra liquid that doesn't seem to have to be there.

I think that it depends on how /thick/ you like your pancakes. I like mine anywhere from 1/4 cm to 1/2 cm in thickness, with only the banana pecan ones coming up thicker then that.

have you been making sure your griddle/pan is very hot when you put the batter on and do you make sure to have the bubbly/almost dry top before flipping?

I feel stupid for saying this... but I've been overlooking the first part. I'm probably not waiting long enough for the pan to heat up first.

With the second part... sometimes I don't even see any bubbling, but I can see part of the pancake burning, so I know something is wrong. I still don't know exactly what the problem is.

I'll try waiting a bit longer for the pan to heat up before adding the batter. Hopefully that does the job.

ok. i think your problem is that your heat is up too high, you put the batter on too quickly, AND the pancake is on the griddle too long.

get the pan hot before adding anything to it, keep it on medium once it's reached the right temperature, add your oil and batter and once you have popped bubbles on top, and the bottom is the perfect shade of golden, flippy-dippy.

the pan is the right temperature when a drop of water skips across the surface.

I rarely have been getting that golden shade, probably because of a lot of errors on my part.

I'm baffled how I can cook non-vegan pancakes without a problem, but I keep messing up the vegan ones. Maybe I used to cook them right and somehow picked up some bad cooking technique along the way.

if you are cooking illiterate, like me, i use bisquik - mix in bisquik and enough water to make it just about ooze off the spoon - ive never had a problem.

Putting a lid on the pan you are using, and keeping your pancakes in an oven to keep warm both result in soggy pancakes ( ... )

I've read about putting them in an oven afterwards from How it All Vegan (Kramer). I've read about putting a lid on top from someone in this community. I never used to do those ways, but after failed attempts at making vegan pancakes, I thought there must be some trick to it.

You're right, I'm likely cooking them wrong.
