oatmeal-raisin cookies

these are nice and moist and chewy. who doesn't like a nice, moist, chewy cookie? not me.


dry ingredients:

2 C oats
1/2 C whole-wheat flour
1/4 C all-purpose flour
1/2 C brown sugar
1/2 tsp salt
1/2 tsp baking soda
1/2 tsp baking powder
1 1/2 C raisins
very generous pinch of cinnamon

wet ingredients:

1/3 C oil/applesauce mixture
1 banana, mashed
1/2 C apple butter/orange juice mixture
1 T vanilla extract

preheat oven to 350 degrees fahrenheit. mix dry ingredients well. blend wet ingredients together before adding to dry ingredients; stir until well incorporated. in heaping tablespoons, drop dough onto lightly oiled cookie sheet (your hands are gonna get real sticky 'cause the dough is, too- try getting them a little damp first!). you might want to flatten them a little because these don't rise much. bake for 10-15 minutes. eat eat eat.
