So I'm sure you've figured out by now how badly I want a mandoline, since I mention it ...like...always. But my brother was insisting that he makes potato chips in the oven using only a very sharp knife and a good deal of patience. So... i tried it. And they taste like normal chips!
Baked Potato Chips
3 small potatoes
spray oil
any spices you want (I used onion powder and dill--tastes like ranch!)
salt
Preheat oven to 350. Cut the potatoes into very thin slices, about 1mm thick. They have to be UNIFORM, or some will burn and others won't cook enough. So you have to have a really good eye. It takes some time but gets a bit easier as you go along.
Spray a baking sheet with olive oil spray. Place chips in a single layer on the sheet (I had to do this in two batches). Spray the chips with more spray; sprinkle on onion powder and salt. Bake until lightly brown, turning if necessary. You have to watch them like a hawk so they don't burn. It took probably 10-15 minutes per sheet, but I was checking them about every 5 minutes. Even if they aren't all completely brown, they will firm/crisp up once they are out of the oven, it seems.
When slightly brown, take them out and sprinkle on the dill or any other spices you want. I let mine drain on a paper towel because they seemed a little greasy even though I was only using a spray (olive oil Pam). Next time I have to see if i can cut back on oil a little, maybe.
So if I had a mandoline and a second baking sheet to speed up the process, I'd probably spend an evening making a million batches of these and store them in a bag, and then I'd have chips for the week! Maybe someday... I'm not sure how much more healthy these are than regular store-bought chips.
