Breakfast burritos are possibly my favorite breakfast food; I mean really... spicy mexican food for breakfast? Awesome. This is a very basic recipe I invented that's kind of my staple as far as breakfast burritos go.
Annette's Basic Breakfast Burritos
1 block silken extra firm tofu, chopped into small dice
2 small potatoes, scrubbed and chopped
1/2 a diced pepper
1 hot pepper
salsa
1 avocado
turmeric, cumin
large dash of soy sauce
5 whole wheat tortilla shells
Place the diced potato in a small 1 qt saucepan; cover with water and boil until just softened, about 15 mins. Drain and set aside.
In a small skillet, saute the peppers until softened. Add tofu and saute until slightly brown. Add a dash of turmeric and about double that amount of cumin. Add large dash of soy sauce; stir to coat. Add the potatoes and saute mixture until potatoes brown a little.
Place filling in shell; add salsa and slices of avocado. Yields about 5 burritos. Perfect to wrap individually and eat all week!
Plenty to fill you up thanks to the potato and tofu, and yummy due to the avocado and salsa. No photo of this one because I ate them too fast :(
