Made my first attempt at mini turkey meatloaves tonight (mainly because I had a craving for ground turkey but didn't want to make burgers). They turned out small but waaaay more tasty that I originally anticipated. I wish I'd taken a picture; they weren't the prettiest but they were cute lil meat muffs. This was one of those rare times when I didn't follow a recipe; just threw things together.
Spicy Mini Turkey Meatloaves
2 servings
1/2 of 20oz pack of lean ground turkey
1c peppers
1/2 small red onion, diced
1 clove garlic
1/2 container fresh salsa (I used Grandessa Artichoke Garlic salsa)
3tbsp grated parm
1 egg white, lightly beaten
Seasonings: salt, pepper, cumin, herbs de province, paprika
1T ketchup
1t siracha
- Spray a muffin tin and preheat oven to 350
- Sautee the onion, peppers, and garlic. Set aside to cool
- Mix the turkey, salsa, parm, and lightly beaten egg white. Fold in the onion/pepper/garlic mix. Season.
- Put ~palmful of ground turkey mixture into each muffin tin
- Cook for 40 mins
- Mix the ketchup and siracha, brush a little on top of each loaf. Continue to cook for 10 additional minutes
- Let set outside of oven for at least 5 minutes
The sauce was a *really* good addition to the little muffins, either for brushing on top or for dipping.
