Tica's Spicy Crockpot Chicken Soupa

Dec 29, 2011 21:33

When I came home for lunch today, my original intent was to make Salsa Chicken in the crockpot...but wound up with a pretty awesome spicy soup instead. I'm almost afraid to try to make this again because I want it to turn out exactly like this again...only better.

4x frozen chicken breasts (I think it was roughly about a pound)
1x can Rotel original
Hidden Valley Ranch seasoning pack
1/2 container of Artichoke Garlic Salsa

I sprinkled the Ranch seasoning on the chicken breasts, then added other seasoning (I think I used Weber grill seasoning) and garlic powder. Then dumped in the can of Rotel and the half container of salsa. Cooked in the Crockpot for...6 hours-ish?
At first, I was a little hesitant because I opened the lid and it was waaaay watery. I added too much tomato AND forgot to drain them. However, it smelled REALLY good. Dinner was ~2 of the chicken breasts (whole) with the sauce and a little cheese on top and half a bag of steamed veggies. But after I finished eating and was searching for tupperware, I looked at it again and realized I should have shredded the chicken because it was perfectly soupy. I think I will toss in this bag of 'mexican vegetables' (since when did adding corn and red peppers to broccoli qualify this mix as 'mexican,' Kroger?) when I have the leftovers tomorrow for lunch to make it more of a stew.
I love when I throw a bunch of stuff in the crockpot and come away with a few servings of a great healthy (and filling) meal!
