House: Warmed!

Jul 16, 2007 23:19

The housewarming party went off pretty well. Many people attended and much food and booze were consumed. The boston butts finally finished cooking after a mere fifteen hours. Throughout the day, we cleaned and made dips and Kentucky Watermelon and BBQ sauce. KAZ and Jess made some tasty cookies as well. This was my first time making BBQ sauce, and i think it went pretty well, although the non-hot one was a bit too salty i think...

"Classic" BBQ Sauce
  • 24 oz tomato sauce
  • 12 oz water
  • 0.5 cup apple cider vinegar
  • 0.25 cup dark brown sugar
  • 2 TB salt (less next time)
  • 2 TB rub from previous entry
  • 0.25 cup bourbon
  • 0.5 cup chopped sweet onion
  • 1.5 hickory smoked tomatoes from previous entry
  • 1 TB black peppercorns, ground
  • 1 TB whole cumin (less or none next time)
  • 1 t coriander, ground (less or none next time)
Mix it all together and simmer till done.

Hot BBQ Sauce
  • 16 oz tomato sauce
  • 0.25 cup apple cider vinegar
  • 0.25 cup honey
  • 1 scotch bonnet pepper, finely chopped
  • 0.25 cup chopped sweet onion
  • 0.25 cup bourbon
  • 2 TB rub from previous entry
  • 1 t grated ginger
  • 1.5 hickory smoked tomatoes from previous entry
  • 1.5 hickory smoked green jalapenos from previous entry
Mix it all together and simmer till done.

The Kentucky water melon was basically just a watermelon soaked in bourbon. It didn't exactly work out as planned, so we just slaughtered it and served it floating in bourbon. It was tasty. I made cocktails with the hickory smoked cherries, but i think the smokiness of the bourbon probably overshadowed the smokiness of the cherries. That was probably for the best as the cherries alone weren't too well recieved... If i try it again, i'll definitely use a milder smoke wood. I also threw together some mojitos that were well liked. I had planned to make some grilled peaches with white chocolate but k thought it would work better as a pie. It did. Super tasty...

Grilled White Chocolate Peach Pie
  • 12 fresh peaches
  • 12 TB unsalted butter, melted
  • 6 TB dark brown sugar
  • 1.5 tsp ground cinnamon
  • 1 bag white chocolate chips
  • 4 pie crusts
  • 8 TB amaretto
Wash, halve and core the peaches. Whisk butter, brown sugar and cinnamon together. Toss with peaches to coat. Grill peaches a few minutes per side at medium high heat, painting with the leftover butter sugar as you like. Remove all peaches from the grill, slice and divide amongst pie crusts. Sprinkle white chocolate chips over pies. Drizzle 2 TB of amaretto over each pie. Bake at 400 degrees until done.

Anyways, much beers were consumed and fun had. Yay.

Sunday, we got a new light for the foyer... If only we had got it a day earlier... It looks neat none the less.
