So yes, we are preparing for our housewarming party. Yesterday, i smoked cherries so that we can have smoked cherry lemonade. We'll see how that comes out... I smoked them using the hotplate method so i wouldn't have to deal with starting and actual fire. I only smoked the cherries for about an hour (using two small chunks of hickory), but i think they still might have gotten too much... As there was still a lot of room in the smoker, i also smoked some tomatoes, jalapenos and a cup of kosher salt. These will probably find their way into barbeque sauce.

Also, tonight we ran many errands and saw Atari's new place. It looks very nice.

Anyways, back to the food... Last night i started preparing the pork butts for the party as well. I trimmed the exterior fat and designed a rub and gave them a healthy dose of it (that is, about one quarter of the recipe each) and then food savered them. Tonight, i gave them another rubbing with about one eight of a recipe each and then set them to smoking about 3:00 AM. Wee... They are going now and should be ready around 5PM today/tomorrow.


John's Rub That He Made Last Night Rub
  • 0.25 cup hungarian paprika
  • 0.25 cup + 2 TB "fancy" paprika
  • 2 TB white pepper corns, ground
  • 2 TB black pepper corns, ground
  • 0.25 cup + 2 TB kosher salt
  • 0.5 cup turbinado sugar
  • 0.25 cup garlic powder
  • 2 TB dry mustard
  • 2 TB dried onion bits, ground
  • 1 TB thyme, slightly ground
