Curry, Puff & Crumble. Quick and Tasty Meals

I love discovering new meals from what’s left in the cupboard when we need to do a shop. These meals aren’t fancy by any means, but they’re easy, filling and tasty.

A few things from this past week...

Tofu, Paneer & Coconut Tomato Curry
Serves 4

Ingredients:
1 tbsp olive oil

1 tbsp coconut oil
2 cloves fresh garlic, minced or jar if don’t have fresh
1/2 tsp whole black peppercorns
1 ½ tsp whole cumin seeds
1 tsp cinnamon
1 tsp ginger
2 tsp extra olive oil
1 brown onion, mustard seeds and cardamom would have been good in this too I think, but I didn’t have them on hand
1 block of firm tofu
1 block of paneer cheese, cubed
1 400g can of whole tomatoes
1 sachet of tomato paste
1 400g can of coconut milk
2 tsp chicken stock powder (I use a vegetable based chicken flavoured stock)
½ cup toasted flaked almonds

Method
1. Heat 1 tbsp oil over medium to high heat in a large wok and add garlic
2. In a mortar and pestle, add peppercorns, cumin seeds, cinnamon, ginger and extra oil and grind until as fine as possible, add to oil and garlic and saute until fragrant
3. Add tofu and cheese and stirfry until brown and flavours all mixed in. You may need to add some extra oil, or a touch of the juice from the tomatoes to keep things moving.



4. Add stock, tomatoes and paste and mix in
5. Add coconut milk, stir, bring to a gentle boil then cook for another 5 mins on lower heat



6. Top with flaked almonds and serve over spinach or pretty good on its own.

Tuna Puffs
My version of this this recipe. These are unexpectedly filling!


Ingredients
50g pork crackle
1 whole Spanish onion
3 small tins tuna - try different flavours, red or panang curry is good
3 tbsp mayo - cream is good too, but mayo adds more flavour
2 eggs
½ cup grated cheese (the more flavoursome the better)
Parmesan for top

Method
1. Process crackle till fine
2. Add onion and process till fine
3. Add everything else and process till well blended
4. Spoon into ramekins, sprinke parmesan on top
5. Microwave till firm
6. Serve on top of garlic buttered spinach with sour cream

Quick Date Crumble
Serves 2


Ingredients
About 20 dates, chopped
Couple splashes of milk
Tsp honey
1 cup plain rolled oats
4 tbsp brown sugar
¼ cup butter

Method
1. Preheat grill
2. Microwave dates, milk and honey, until dates are soft, careful not to let dates burn
3. Microwave oats, sugar and butter, mix well
4. Divide date mixture into two ramekins, top with oat mix
5. Grill until top is brown and bubbling, transfer to bowls and serve with big scoops of creamy vanilla icecream

An (almost) instant sweet fix! Although the second time I made it, it was insanely sweet. I forgot how sweet dates are on their own and added too much honey. Still, I made a valiant attempt and ate most of it!
