I had my girlfriend over for a catch-up last night and made us
this for dinner. I altered it slightly though as I didn’t have enough time to coat and bake the chicken, so here’s my very slightly altered version:
BBQ Chicken, Blue Cheese, Cranberry and Mandarin Salad
Serves 4
Ingredients
1 BBQ chook, shredded
Packet of mixed lettuce leaves
1 can (310g) mandarin oranges, drained, syrup reserved
1 cup dried cranberries
4 ounces blue cheese, crumbled
3/4 cup Ranch dressing
Method
1. Mix all ingredients up very well (adding a bit of the mandy juice for extra moisture and sweetness if liked), in a pretty bowl. Unless you're messy like me - see pic above - it will look quite presentable.
2. Enjoy
We shared it with M and it just served the 3 of us, although we did pig out on it! It was so very, very good. The tanginess of the blue cheese is perfectly tempered by the sweet tartness of the cranberries and juicy mandies, along with the very slightly bitter crunch of pecans.
Because of the blue cheese, it was pefect with a glass of red (loooove red wine and blue cheese - "Gapsted King and Alpine Victoria 2002 Cabernet Franc - Limited". I know pretty much zilch about wine, but thought I’d include the name in case I see it again, as it was good. Probably won’t though, as it was a limited release).
