I had some lovely fresh basil left over from Saturday night’s tomato salad which soon was not to be so fresh, so decided to use it up. I was a bit rough with the ingredients, so these are approximate measurements:
Pesto Variation
Serves 2
Ingredients
Bunch of basil
½ cup raw macadamia nuts
1 tsp minced garlic
¼ tsp sea salt
½ - ¾ cup shredded parmesan cheese
¼ cup olive oil (more or less until you have your desired consistency)
Method
~ Process in a food processor, adding oil gradually
~ Ready to serve with pasta or grilled meats…

~ Or, like I did, you can pop a few spoonfuls of it into little bowls, throw it in the microwave for about a minute - minute and a half, until it cooks, dries up a little and becomes this lovely crunchy topping thing that you can serve on top of grilled vegies or meats. The parmesan melts then hardens and it’s really, really GOOD. Oh yes.
