Pineapple Rasin Rice

I think this rainy weather is making want to eat more tropical-ish foods. I put this together in the rice steamer today and it turned out good.

Ingredients
2 & 2/3 cp Pineapple Juice
1/4 cup peanuts chopped
2 2/3 cp rice (I used the plain long grained this time)
butter and/or salt (optional)

Procedure
Method 1 Stovetop
1. Bring juice to boil over moderate heat
2. Stir in rice, butter and or rice
3. Stir peanuts and raisins
4. Remove from heat, cover let stand for 5-7 minutes

Method 2 Rice steamer
1. Add rice and juice into steamer pot
2. cook according to manual instructions
3. Stir in peanuts and raisins just after the rice has finished the cooking process.

Chef's notes: Tonite I'm eating this (as I write this entry) with some baked chicken breast with cherry sauce. I made that with some cherry jelly but it's not quite ready for the blog yet. it needs some tweaking. but tastes pretty good. The original recipe I saw of this, out of 1950's cookbook had waterchestnuts. but I didn't have any of those. I did however have a pack of snack nuts. I rinsed those off and used those. My video cord shipped from Shanghai today so it should be here next week *yay*
