AAR Atlanta in one week

Today has been a busy day.  In one week I'll be on a plane for Atlanta and I've still got a lot to do before I'm ready to go.  But I'm getting shit done.  My paper is finished, and I've shifted my focus to the Powerpoint presentation.

I'd love to have typos pointed out. After a while I see what I meant to type, not what I actually did.

Vegan diets can be cheap, and often are in countries that have them by default. The carbs you list all count as vegan, although if that's all you're eating they're just as much of a diabetes risk because of the way the body converts carbs (which you probably already know, but I just learned. Hell, until recently, I didn't know what a carb was). Dry goods, like beans, can be very cheap, but require a time investment in preparation. And not everyone has the time or energy to soak and cook dried food.

One problem with the cost of vegetables is that the skills for preserving them through the winter aren't as widespread as they once were, so it's difficult to take advantage of best pricing to buy in bulk. But as a poor kid who lived out of cans a lot, they're not expensive. Fresh vegetables can be very pricey, especially if they're imported. But as Briggs points out, it's not just about cost, but about the political agenda behind the cost.
