An interesting but disappointing lesson this week: Now I know why the makers of Jello® add artificial flavors to their product. I decided that I'd make my own fruit gelatin using Knox® gelatin and fruit juice, as given on the gelatin package. It just included fruit juice (some cold, some at the boiling point), the gelatin, and a little sugar. I used organic black cherry juice, which has a lovely and sturdy flavor when it's drunk. My cherry gelatin, however, has no flavor to speak of. I can't figure that out. I will try a couple of other natural juices with the gelatin and see if some end up being tasty, or if they all end up being without any noticeable flavor. And it seemed like such a healthy and delicious idea. Ah, well; another of life's little surprises.
