"Gold Cake"

300g sugar
350g cake flour
165g butter (or 140g butter-flavor shortening)
130g egg yolks
14g baking powder
160g milk (or 180g milk if using shortening)
1 t vanilla
Put shortening into mixer for 1 min
Add sugar and a pinch of salt
Mix on medium for 4 minutes
Add egg yolks very slowly
Mix baking powder with cake flour
Add vanilla to milk
Add half dry mix slowly
Add half liquids
Add remainder of dry slowly
Add remainder of liquid
If using 2 round pans, WEIGH the batter and divide in half to ensure equal amounts of batter in each pan for even baking.
Check in 12 min to be sure they are cooking/rising evenly (rotate if not)
Total baking time 18-20 min for two 9-inch pans
Let cake(s) rest for 15 minutes, and then turn them out onto cooling racks.
Let cool for 1 hour
Icing
COOL YOUR MIXER PARTS
2Tb water in small pan
1t of powder jelatin
wait 5 min
put over low heat to melt
Into chilled bowl
2c whipping cream
1/2 c cocoa mix
wee-shot of vanilla
turn mixer on low
drizzle in jelatin mixture
turn onto high until icing sets up
