Bran Flakes Muffins

1/2 c sugar (scant)
1 1/4 c flour
1 1/4 t baking soda
1/2 t salt
1 c buttermilk (skim milk with a slosh--about 1 t--of lemon juice)
1/4 c vegetable oil (scant)
1 egg
3 c bran flakes (or raisin bran if you wish)

Mix all together. You can mix the bran flakes, milk, oil, and egg first, and the rest seems to blend a bit better that way. Spray mini-muffin tins with non-stick spray. Drop a teaspoonful of batter into each muffin indentation (I use the kind of teaspoon you use on the dinner table and push the dough off with my thumb). Bake at 400 for 10-15 minutes. Makes 36 mini muffins or 12 regular muffins.

Note: Using the little muffin papers was a big disaster for me because these muffins stick to them and I ended up only being able to eat about half of the muffin without having to suck it off the papers. Three of these muffins fit nicely into those little zip-lock snack bags (the 1/2 size from a sandwich bag).
