and i *finally* get around to cooking that vegan pot-pie i spoke of last february. it wasn't quite as exciting as i'd anticipated, but oh i have a huge amount of veggies to keep me warm this winter.
the flavor was ok - typical pot-pie blandness. but it was the crust that threw me for a loop. i thought for sure it would be as easy as when mom used to use two pre-made pie crusts for her fruit pies - one to fill & one to use as a top. well, my "top" didn't want to come out of its pan, so i had crust pieces instead. i made a mess of my kitchen trying to re-roll out the crust and finally just gave in to having a hole in the top.
so, it's not my prettiest creation, but it's yummy enough and didn't look quite as horrible as i expected it to turn out:
