Saturday/Baked Chicken

So, this is baked chicken at my house. With roasted rosemary reds and sauteed green beans. (WE EAT OTHER VEGETABLES, I SWEAR! I've just been on a green bean kick because they're so versatile and delicious like short, adorable Seth Green - coincidence?!!)

So here's the dealio, yo: Cut up your PO-TAY-TOES first, into quarters or other smaller than your mouth shapes and sizes. In a pan/glass baking dish large enough to hold them all, coat the bottom with olive oil and toss in some minced garlic and rosemary. Then season with salt and pepper and some garlic powder, too. Throw in your potatoes and toss to coat. I also like to put some more of the seasonings (including chopped garlic) and oil on top, just to make sure they're going to be super yummy. Put those in the oven at 450 (if you're short on time, you can parboil the potatoes first) - I tend to put mine on the top rack since most of the burnable fresh seasonings are on the bottom so that there's less of a chance of total burnination.

Now take your chicken breasts and season with salt/pepper/onion/garlic. I also put some of the Melting Pot's Garlic and Wine seasoning on top, but it'll still be good without it. Then take some Dijon mustard and smear on top of the cutlets. In the baking pan for the chicken, put barely enough white wine to cover the bottom of the pan, as well as a few splashes of lemon juice and (say it with me) some minced garlic. Turn the oven down to 350 and put the chicken in to cook.

At this point I like to put my beans in just enough water to cover them and turn them on medium low with some salt. When I make my beans this way, I like them crunchy still, so I don't want them to over cook. Also, this keeps me from having to keep an eye on them while the rest of the food minds itself in the oven for 20-30 minutes. When everything else is finishing up (assuming the beans are how you want them - if not, turn up the heat long enough to finish them off), drain off the water and throw some butter and a couple of heavy handed splashes of lemon juice in the pan, along with some salt and pepper. Sautee' for a few minutes while tossing.

Plate everything and enjoy! This is one of my favourite meals and it's so simple that it really doesn't take much effort - it's what I call a lazy meal (since I rarely parboil the potatoes). I hope you guys like it too!

PS - Can you tell all the good dishes were in the dishwasher last night, LOL? Just pretend these are my nice ones! I command it! @_@ *hypno-eyes!*
