thank you for sharing this. i tried to bake dijon chicken and roasted reds using a recipe from my Betty Crocker cookbook, but the chicken turned out a bit dry, and the potatoes were dry and undercooked. coating the bottom of the pan with olive oil for the potatoes and all the lemon juice and white wine for the chicken will do the trick to keep them moist.
also, i'm impressed with the quality of your photo. you must have a nice camera, because it's usually difficult to capture food so vividly!!!
