Mmm. I loooove caramel apples. Mind you, I just love caramel sauce. It's just so fudgy. Caramel apples with buttermilk pancakes turned out super well. The tuna/corn pasta bake is like an old family type recipe, soo good.
Buttermilk pancakes I cheated on. Sure, I could make them from scratch, but I just preferred to use a shake mix, which turned out pretty well anyway. So there's the 'secret recipe' for buttermilk pancakes.
Now, for caramel apples.
I basically just used a basic caramel sauce, peeled, cored and sliced apples (i used fuji, doesn't really matter which type) and simmered them for quite awhile until the sauce thickened.
caramel sauce is basically made up from butter, thickened cream and brown sugar. you basically throw everything into a pot and stir until it combines and thickens. make sure you put everything in at the same time! i tried melting the brown sugar then adding butter, but then i started stirring it and it hardened. DON'T MAKE THE SAME MISTAAAKE. you can play around with each measure of cream, butter or sugar depending on how thick you want the sauce. maybe try 1/4 C butter, 1/2 C cream and then about 1/2+ brown sugar. if you want it thicker, less cream. if you want it thinner, then add more cream. ^^

simmer for awhile until it's quite thick and the apples are cooked through --

Tuna pasta bake is seriously one of the easiest things in the world to make. All you need is -
Cooked pasta (I used spiral and about a whole 375g pack, but that was too much.)
1 can of cream of mushroom soup
1 can of tuna in brine
1 can of sweet corn kernels
Bread crumbs
Cheese
Mix mushroom soup, tuna, sweet corn kernels and salt and pepper to a pot and combine with cooked pasta. Place in a bake safe dish, layer top with breadcrumbs, cheese and salt and pepper. Bake until cheese has melted and everything has warmed through.
Seriously best comfort food. (except for bangers and mash, that is.)
Pasta bake, pre-oven stage. (You're supposed to use grated cheese, but .. i couldn't be bothered, so i just broke up a few pieces of tasty cheese and layered with Parmesan.)
