So I looked in my fridge last night and noticed a ziploc container FULL of blueberries. Then I started craving blueberry pancakes. I don't even order them in restaurants - ever. But I had pancakes on the brain.
Oddly enough, the first google search return for "pancake recipe" was really, really good. The recipe is on
allrecipes, I added 1/2 teaspoon of vanilla and 1/4 c milk, and will probably do 1 tsp vanilla next time. I threw a fat handful of the blueberries into a saucepan with a few blackberries, a few tablespoons of grade b maple syrup, and a squirt of agave nectar, mashed a little bit, and reduced for the syrup. I also plopped some berries into each pancake as they cooked.
I combined the dry ingredients the night before to save a little time since I made these this morning before work.
Edit: I just noticed a french toast recipe below with blueberry sauce. great minds think alike?
