This is a great salad I love making in the summer, especially with fresh vegetables from my farmer's market.
INGREDIENTS
2 ripe avocados cut into 1 inch cubes
1 large tomato cut into slices
1 medium red onion, sliced
4 oz. fresh mozzarella cheese
1 tsp lime juice
5 Tbsp balsamic vinegarette dressing (I like Trader Joe's brand)
fresh ground pepper to taste
DIRECTIONS
1. Slice up avocados, tomato, onion, and mozzarella. Place all the ingredients into a large bowl.
2. Add balsamic vinegarette, lime juice, and fresh ground pepper to taste. Toss the vegetables in the dressing to combine.
3. Refrigerate for at least 1 hour before serving.
I love avocados so I put in 2, but you can adjust this recipe any way you'd like for what ingredient you love best.
