"Ono" Butter Mochi Linda Lee
1 box Mochiko Flour 1 block butter (quarters) well softened 5 eggs 2 1/2 to 3 c. sugar 1 can Coconut Milk 1 can Evaportated Milk 1/2 cup Milk or Water 1 T. Vanilla 3 tsp Baking Powder 1 c. Coconut Flakes
Preheat the oven at 350 degrees. Add all ingredients in a large mixing bowl. Use an approx. 10x 15" pan & wipe with butter wrapper to coat evenly. Mix ingredients using an electric hand mixer at medium speed until all ingredients are well-blended. Pour into pan and place in center rack. Bake for 1 hour and 5 minutes. Turn off heat and leave in oven for another 5 to 10 minutes before removing. Cool and cut desired squares. Serve in muffin cups.
I love butter mochi!
